The MONTEBUDELLO variety is a local variety historically cultivated on the hills of the province of Bologna. Trees of this variety are officially authorized for use in the production of olive oil with the protected geographical indication Olio dei Colli di Bologna.
Oil from monovarietal fruit has a medium level of fruitiness, a predominance of piquant notes over bitterness, and aromas of artichoke, apple, and tomato. The variety is being studied by research institutes as part of programs for the conservation of agrobiodiversity and organic farming.
