The Salella variety is a tree with an upright growth habit and dense crown, as well as dark green lanceolate leaves. Due to its decorative appearance, the plant is often used in landscaping.
The fruits ripen earlier than many local varieties. For the preparation of "crushed" olives, harvesting is carried out in September, when the fruits still remain green and fleshy.
Oil from the fruits of this variety is characterized by a balanced taste with notes of almond, spices, and herbaceous aromas. The fruits are well-suited for traditional processing in brine with the addition of bay leaf and fennel.
