The variety belongs to local landraces of folk selection. Fruit ripening begins in the first half of September. The fruit flesh is pale with slight reddish tints, possessing a sweetish taste with a barely noticeable bitterness.

The variety is used exclusively as a table olive. Due to the specific taste, the fruits do not require long processing to remove bitterness. Traditionally, they are consumed pan-fried with oil, garlic, and hot pepper, as well as in the form of frozen semi-finished products.

Scientific publications note that Nolca may be genetically close to other varieties, such as Mele.
