The name Olivastra does not denote one specific variety, but is used for a group of autochthonous varieties. Olivastra Seggianese is endemic to the Monte Amiata region. These are large trees with vigorous growth and pendulous branches. The variety is hardy, possesses high resistance to low winter temperatures, and is capable of growing in mountain conditions at an altitude of 450–650 meters, however, it is prone to alternate bearing.
The fruits of Olivastra Seggianese are small, with a large pit, ripening early and simultaneously. The Olivastra variety from the Puglia region, widespread in the Itria Valley, is characterized by medium-sized fruits that acquire a reddish hue when ripe. All varieties of this type are grown exclusively for the production of high-quality olive oil.
