The Oliva Rossa olive variety is an old local variety that developed through folk selection in the Apulia region, Italy. In a number of databases, the variety is considered a synonym for Oliastro.

The fruits of the variety are used to produce olive oil, which has a strong flavor, notes of almond, and a delicate fruity aroma. Research shows that this variety is susceptible to the disease caused by the bacterium Xylella fastidiosa.
