OLIVASTRO represents a spontaneously growing wild form of olive (Olea europaea L. var. sylvestris or var. oleaster), which is the ancestor of cultivated varieties. In a number of regions of Italy, this term is used to designate local adapted populations, such as Olivastro di Bucchianico.
The plant is distinguished by small leaves and fruits, high endurance to the conditions of Mediterranean flora, and longevity. Oil from wild olives is characterized by a high content of polyphenols and antioxidants, while the tree can reach a height of 10–14 meters and possesses the ability to regenerate.
