The Olivastro Scarlinese tree is characterized by high growth vigor, a dense spreading canopy, and a semi-pendulous branching habit. The variety is traditionally widespread in the Tuscany region.

The fruits have an irregularly ovoid, slightly asymmetrical shape. During the ripening process, the color changes from green to black; the skin is glossy, with visible white lenticels. The variety is valued for its good oil yield and is a component of regional oils with a protected designation of origin.
