The RAZZOLA variety is autochthonous to the Liguria region in Italy. The tree has an elegant crown shape suitable for a polyconical vase training system and is well-adapted to the windy conditions of local valleys.
The plant is self-pollinating and characterized by consistent productivity. The medium-sized oval fruits change color from green to dark purple upon ripening; the ripening period is long and extended.
The primary purpose of the variety is the production of premium quality olive oil with a yield of up to 24%. The oil has a balanced flavor with notes of almond, herbs, and artichoke, as well as characteristic bitterness and pungency. Larger fruits are sometimes used for canning.
