Rasara is a local variety historically cultivated in the Euganean Hills area. Harvesting is carried out after the fruits begin to change color, and the variety is suitable for canopy formation that allows for the use of mechanized harvesting equipment.
The variety is exclusively for oil production. The resulting oil is characterized by low acidity, high polyphenol content, and pronounced fruity aromas with notes of artichoke and almond. It is used both in pure form and in blends with other local varieties.
