Rasara is a local olive variety that is traditionally cultivated in the area of the Euganean and Berici Hills. The variety is not the result of modern breeding, but represents a historically established culture.
Oil from Rasara olives possesses an intense golden-green color, low acidity, and a high polyphenol content. The taste and aroma of the finished product contain shades of artichoke, fresh herbs, and almond. The variety is considered resistant to growing conditions and is often used to create monovarietal extra virgin olive oil.
