Raio is a long-lived tree whose history dates back to Roman times. The fruits of the variety are small in size, and yields can be irregular. The variety is adapted to the climatic and soil conditions of the Umbria region, especially in the Colli Amerini area.
The variety is intended exclusively for the production of Extra Virgin olive oil. It is characterized by a harmonious taste of medium intensity with notes of grass, almond, artichoke, tomato, and black pepper. It is used in the composition of Umbria PDO oils, accounting for up to 85% of the blend.
