The Rougette de l'Ardèche tree has medium vigor and a semi-upright, globular canopy with very light, broad, and flexible leaves. The variety is self-fertile and shows moderate alternate bearing when irrigation is provided.

The cylindrical fruits acquire a reddish-purple color upon ripening and are distinguished by firm flesh and low water content. Harvesting typically takes place in November-December. The variety is suitable for various soil types and possesses frost resistance, but is sensitive to the olive fruit fly and the fungal disease 'peacock spot'.

Oil from these olives is characterized by a complex aromatic profile. Depending on the harvest timing, the flavor may be dominated by notes of artichoke, bitterness, and pungency, or by nuances of ripe apple, almond, red fruits, and hay.
