The variety is a local heirloom cultivar that has been grown for centuries in the Var region. The name comes from the French word for "reddish" and describes the color of the fruits, although the genetic identity of various olives with this name may differ.

The plant is characterized by cold tolerance and low alternate bearing. In traditional farming, including in high-altitude areas, the variety is used for olive oil production. Identification of the variety by external traits is difficult due to the variability in fruit and leaf morphology.
