The ROSSINA variety, also known as Sarganella in the Marche region, is an ancient local variety. Genetic studies confirm its closeness to the Selvatico variety, although their agronomic indicators differ. The variety is distinguished by high productivity and is characterized as robust, with centennial plantations present in the region.

Fruits of the ROSSINA variety are used primarily for olive oil production, often included in blends with a protected designation of origin, for example, Colline di Romagna. Oil from this variety possesses fruity notes and a characteristic bitter aftertaste. The fruit ripening period is medium.
