The winter variety Beurré gris d'hiver ripens in the first half of October; consumer maturity lasts from mid-November to February–March. The tree is of weak to medium vigor, with a sparse weeping crown, and possesses medium winter hardiness and susceptibility to scab. The fruits are ovate, covered with gray-brown russeting, and have tender juicy flesh with a sweet or sweet-sour taste.

The ancient variety Graue Herbstbutterbirne, known since the 17th century, is distinguished by fruits ranging from ovate to spherical in shape, entirely covered with cinnamon-colored russeting. The tree is of medium vigor, with a spreading crown. The flesh of the fruits is melting, with a nutmeg undertone. The variety is characterized by low yield and high susceptibility to scab.
