The Saint-Mathieu variety belongs to the group of pears for cooking and stewing. The fruits are practically not consumed fresh due to the firm flesh and the presence of sclereids. The tree is characterized as vigorous and hardy.
Harvesting takes place in the second half of September; the fruits are ready for consumption from October. The skin color is green, with a red blush possible upon ripening. Regular fruiting requires pollinator varieties such as Beurré Hardy, Conférence, Doyenné du Comice, Triomphe de Vienne or Beurré Lebrun.
