The variety Kata belongs to the winter soft wheat group. In technological studies, it was characterized by optimal gluten strength with an index of 60–90, which allowed for obtaining bread with a fine and uniform crumb structure.
In the course of research work, the variety was used as an object for genetic studies, including the study of antioxidant systems and resistance to Fusarium. An analysis of its physicochemical and rheological parameters in comparison with other Croatian varieties was also conducted.
