The variety is the result of a natural cross between Gouais Blanc and Pinot Noir. The vines are characterized by medium vigor and hermaphroditic flowers. The ripening period is 150–160 days. The clusters are cylindrical-conical, compact, with an average weight of 103 g. The berries are round, yellow-green, weighing about 1.8 g, with thin, firm skin and juicy pulp.
Aligoté shows increased winter hardiness, withstanding frosts down to -22...-24°C, and adapts well to limestone and sandy soils. Resistance to downy mildew is low, to powdery mildew is increased, and the variety is prone to grey rot. It requires yield control to maintain wine quality and regular pruning.
Wines from this variety are distinguished by a fresh, harmonious taste with floral and fruity notes, as well as pronounced minerality. The product is not intended for long aging and is recommended for consumption at a young age.
