The Pardina (Pardillo) variety is autochthonous to Spain, historically associated with the Extremadura region. Given that the name is often used as a collective term, it most frequently refers to the Cayetana Blanca (Jaén Blanco) variety, and in some cases to Albillo.

The purpose of the variety is exclusively technical, for the production of white wines, which are characterized by a straw-yellow color, mild taste, and moderate acidity. The flavor profile of the wines includes notes of citrus, green apple, pear, fennel, and herbs.

The variety demonstrates high adaptability to hot and dry climatic conditions. In winemaking, it is often used in blends with more aromatic grape varieties to create young, fresh wines.
