Brassica oleracea L. (Savoy Cabbage Group)

Savoy cabbage is unsuitable for fermentation and pickling due to the development of bitterness and a dry texture. Its technological value lies in the tenderness of its leaves, which lack tough veins, making the crop optimal for quick culinary preparation, freezing, and the production of fillings.

Unlike white cabbage, Savoy cabbage is virtually never used for mass-market commercial pickling, as the finished product loses its organoleptic qualities. The crop is prized for the soft structure of its leaves, which allows for the preparation of stuffed cabbage rolls without the need for prolonged heat treatment or pounding, as well as for its suitability for quick braising and use in soups.

Technological preparation of Savoy cabbage for freezing or sautéing requires mandatory blanching to preserve color and structure. The short shelf life of the raw material, which requires a strict temperature regime of 0 to +4 °C, limits logistics for processing plants, and breeding efforts to develop varieties for processing are conducted on a targeted basis.
