Suitability of parsley for freezing

Petroselinum crispum (Mill.) Nyman ex A. W. Hill

Parsley is well-suited for freezing, retaining its biochemical composition and aromatic properties for up to one year. After thawing, the greens lose their original texture and are therefore intended for cooked dishes.

Freezing parsley allows for the efficient preservation of the vitamin content and antioxidant activity of the greens. During low-temperature processing, cell walls are disrupted due to the formation of ice crystals, leading to a loss of tissue firmness; therefore, the product is not suitable for fresh use but retains its qualities in soups, sauces, and stews.

Technological preparation requires the complete removal of surface moisture to prevent the greens from clumping into a solid mass. To slow the degradation of chlorophyll and volatile essential oils, the use of vegetable oil as a protective medium is effective, while product quality directly depends on the cooling rate and the size of the portions being frozen.
