Drought resistance assessment in durum wheat is based on measuring leaf water-retention capacity and photosynthetic activity, evaluated through chlorophyll a and b depression under osmotic stress. Laboratory diagnostics include seed germination in sucrose solutions with measurement of seedling and seminal root length, which allows for the identification of varieties with high suction force capable of germinating effectively under moisture deficiency.

In field conditions, resistance is determined via morphophysiological traits such as the presence of a waxy bloom, the degree of leaf rolling, and flag leaf area. Drought resistance critically impacts crop structure, correlating with the number of grains per spike and thousand-kernel weight, and also determines the stability of protein content and grain vitreousness, which are essential for pasta production.
