The variety is universal: it is used as a table olive for canning and for the production of oil with an intense fruity aroma, pronounced bitterness, and pungency. Two ecotypes are distinguished: cuyano with a curved pit and riojano with a straight pit.

The fruits are large, oblong, and ovoid in shape with a pointed tip. The variety is characterized by late ripening. The crop is sensitive to low temperatures: damage to the fruit even during light frosts leads to a decrease in oil quality and resistance to diseases.

The variety is traditionally cultivated in Argentina, mainly in the provinces of Mendoza and La Rioja. Oil produced in the Mendoza region has geographical indication status.
