The variety has a centuries-old history and is most typical for the Aragon region. The name 'Empeltre' comes from the Aragonese word for 'grafting', which is due to the low rooting ability of cuttings, making grafting the traditional method of propagation.
The trees reach large sizes and have dark green leaves. The variety is distinguished by high resistance to soil-borne fungal diseases and good adaptability to mechanical harvesting. The fruits are of medium size, about 2.7 g, and have an asymmetrical, slightly elongated shape.
The oil content of the fruits exceeds 18%. The oil of this variety is valued for the absence of pronounced bitterness, a mild and sweet taste, and a fruity aroma. Its primary use is olive oil production, although the fruits are also used as table olives, particularly in a dehydrated form.
