Athinolia is a late-ripening variety with moderate vigor, capable of growing at altitudes of up to 1000 meters above sea level. The fruits are of medium size and oval shape, with a weight of 2.2 to 2.9 g and a height of 7.5 to 25 mm.

The plant is characterized by high hardiness and adaptability to drought and poor soils. The yield of the variety is characterized as stable but moderate. Harvesting is usually carried out in the period from late December to early January.

The variety is an oil-processing type and is grown primarily for oil production, which is valued for its balanced fruity profile with notes of herbs and citrus, as well as for its low acidity. A secondary use is the production of cracked green olives.
