The variety is the result of centuries of folk selection and adaptation to the limestone soils of the Ardèche region. The fruits are oval-shaped and ripen in early December. The oil obtained from this variety is characterized as having a mild taste.
In genetic studies, the variety stands out as it does not belong to the four main genetic groups characteristic of Mediterranean olives. It is often included in collections for the comparative study of morphological traits.
