The AURINA variety, also known as Aurina di Venafro, is a traditional cultivar of the Molise region. The trees are well adapted to local climatic conditions and are traditionally trained in a vase shape.
The fruits of this variety are distinguished by their small size and low fleshiness, which reduces their attractiveness to the olive fruit fly. The variety shows low susceptibility to olive knot and resistance to Verticillium wilt.
The resulting oil possesses a balanced taste with light to moderate bitterness and pungency. The aromatic profile includes notes of cut grass, green apple, fresh almond, and lettuce.
