The Clermontaise tree possesses high growth vigor, is well adapted to growing in dry soils, and is resistant to wind. The variety is distinguished by regular bearing with a low tendency toward alternate bearing and requires the presence of pollinator varieties for optimal productivity.

The fruits are primarily used for producing olive oil, which is characterized by a smooth texture and mild taste with almost no bitterness, with pronounced notes of hazelnut. The product is often used in blends to achieve a balanced profile.
