The variety CIMA DI MONOPOLI (synonyms Ogliarola di Lecce, Cima di Mola, Cima di Fasano, Molese) is a traditional tree with a medium level of vigor and dense foliage. Due to the monumental nature of old trees and the specific features of crown formation, the variety presents difficulties for modern industrial cultivation methods.

The fruits of the variety are small. The tree demonstrates a pronounced tendency toward biennial bearing with medium productivity. The variety exhibits tolerance to low temperatures, low susceptibility to peacock spot (spilocaea oleaginea), and medium or high sensitivity to olive knot (Pseudomonas savastanoi).

The oil obtained from the fruits of this variety possesses balanced indicators of fruitiness, bitterness, and pungency with characteristic flavor notes of almond, grass, and artichoke.
