The Cima di Bitetto tree has a spreading canopy of medium density and is characterized by moderate growth vigor. The yield of the variety is estimated as moderate. The variety is self-sterile; Coratina and Mele are recommended as pollinators.
The fruits are large, weighing about 4 grams, and have a spheroidal, slightly asymmetrical shape. During the ripening process, the color changes from green to violet-black. The fruit skin is covered with bloom and contains numerous small lenticels. Ripening occurs early.
The variety is intended for table use. Due to the crisp flesh and flavor profile, olives of this variety are traditionally used for preparing snacks in brine.
