The Cima di Mola variety, also known as Ogliarola di Mola, is an indigenous Apulian olive variety. It belongs to ancient varieties that are currently protected by the Slow Food organization due to a historical threat of extinction.
The plant is characterized by harvesting and processing complexity, which affects the cost of the product. The oil of this variety possesses a medium-intense fruity taste with pronounced bitterness and notes of almond, as well as a rich aroma, including shades of fresh hazelnut, arugula, tomato leaf, and herbs.
