The Giarraffa variety is a medium-vigour tree with a spreading canopy of medium density. The fruits are very large, weighing from 6 to 15 g, have an elliptical shape and a wine-black colour at maturity. The variety is characterised by early ripening and low and alternate bearing.
When used as a table variety, the fruits are valued for their high flesh-to-pit ratio and ease of pitting. The resulting oil has a light fruity aroma with notes of almond, artichoke and tomato, as well as a sweet taste with slight bitterness.
The plant is demanding in terms of growing conditions. Medium to medium-high susceptibility to leaf spot is noted, while resistance to Verticillium wilt and olive knot is assessed as medium. The variety is distributed in the central and north-western parts of Sicily and is found in Calabria and Apulia.
