The tree is characterized by medium to medium-low vigor and an open canopy shape in the form of an inverted truncated cone. The leaves are elliptic-lanceolate in shape and medium in size. The fruits are medium, weighing about 3 g, with a round symmetrical shape, and acquire a purple or bronze hue upon ripening.
The variety is partially self-compatible, therefore it is recommended to plant up to 10% of pollinator trees in commercial orchards. The yield is medium-high but biennial. Fruit ripening is late.
Oil from Peranzana fruits has a low yield of about 15%, but is distinguished by a low acidity level and pronounced flavor notes of tomato, artichoke, arugula, almond, and herbs. Table fruits have firm flesh and retain their hardness well during canning.
