The Rossella variety was obtained as a result of a breeding program. Its genealogy includes the crossing of the (Altgold rotkorn × Spada) line with the Altgold line.
The variety is used in the food industry, in particular for the production of pasta. Studies note good technological grain properties for the production of bakery products, ensuring crumb porosity, as well as its suitability for creating products with high nutraceutical value.
