In classic winemaking, Petit Cabernet acts as a historical synonym for Cabernet Sauvignon, which originated from a cross between Cabernet Franc and Sauvignon Blanc. This is a late-ripening wine grape variety with vigorous vines that prefers gravelly soils. The berries are small with thick skins, used to produce wines with high tannin, acidity, and aromas of black currant and spices.
In the works of University of Udine scientists, the name Petit Cabernet or code 58-083 is applied to the hybrid variety Cabernet Eidos, obtained by crossing Cabernet Sauvignon and the Bianca variety. This hybrid was created to increase resistance to fungal diseases, in particular downy mildew, and possesses winter hardiness down to -22°C.
