The variety is a historically established mutation of the Vitis vinifera L. species. The vine is classified as an early-ripening wine grape variety intended for winemaking. The grapes are characterized by high acidity, and the resulting wines have a light and mineral profile.
The variety is susceptible to fungal diseases, including downy mildew, powdery mildew, botrytis bunch rot, and bunch stem necrosis. In winemaking, despite being a "red" type mutation, Roter Elbling is used primarily for creating white and rosé wines, as well as Sekt-style sparkling wines.
