Verdejo is a grapevine variety of the species Vitis vinifera, presumably originating from North Africa and brought to Spain in the 11th century. Genetically, the variety is related to the Savagnin and Castellana varieties.

The plant belongs to the late maturity group. Leaves are medium-sized, five-lobed. Bunches are medium, berries are small, greenish-yellow in color, and densely packed in the bunch. The variety is moderately resistant to drought and prefers clay and clay-limestone soils.

A wine grape variety used primarily for creating white still wines, less frequently for sparkling and fortified wines. The wines are characterized by high freshness, pronounced acidity, and an aromatic profile with notes of citrus, green apple, pear, and herbaceous undertones.
