The variety is intended for the production of white wines, often used in blends and for creating sparkling wines. The wines are characterized by high acidity, freshness, as well as pronounced fruit and mineral notes.

The plant has a high yield. The variety is very susceptible to downy mildew, and to a lesser extent susceptible to Botrytis and powdery mildew. It is important to distinguish Cercial B from the Sercial variety grown on Madeira, as these are biologically different entities.
