The name Ch. De Fontainebleau is historically associated with the Chasselas doré variety, which was cultivated in the gardens of the Château de Fontainebleau for the royal court and became the basis of grape production in the village of Thomery in the 18th century. A special method of growing on grape walls allowed the berries to maintain freshness for a long time.

As a Chasselas variety, this grape belongs to table varieties. Its berries are characterized by tender and juicy flesh, as well as a yellowish-green skin color.
