The César N variety is a vigorous vine with black berries. In winemaking, it is valued for its ability to improve the structure, color intensity, and tannin content of wines, so it is rarely used for the production of varietal wines, serving as an addition to Pinot noir.

Genetically, the variety is the result of a natural cross between the Pinot noir and Argant varieties. In literature, it appears under the synonyms Cesar Noir, Celar, Gros Monsieur, Picargniot, Romain, Romano.
