Morillon is a mid-season technical white grape variety. The plant has medium vigor and forms medium-sized, slightly dissected pentagonal leaves. The clusters are medium, conical, dense, and often winged; the berries are round and yellow-green in color.
The variety prefers warm sites with deep, lime-rich soils and is characterized by moderate susceptibility to diseases. Wines made from Morillon possess minerality and can be either fresh with high acidity or full-bodied with notes of nuts and pastry when aged in oak barrels.
