Sangiovese is an autochthonous Italian variety, genetically derived from the natural crossing of the varieties Ciliegiolo and Calabrese Montenuovo. The bush is medium-vigorous with vertical shoot growth. The leaves are medium-sized, predominantly five-lobed. Clusters range from medium to medium-large; berries are medium-sized, oval-shaped, and black-violet in color with thin skin.

The variety belongs to the late-ripening category and is demanding of solar heat, sensitive to low winter temperatures and late frosts. Pruning is necessary during cultivation to prevent fungal diseases. The grape adapts to various soil types, while preferring sites that are not too fertile.

Technical characteristics of the produce include high acidity, pronounced tannins, and rich color of wines suitable for long aging. The variety displays significant polymorphism, which leads to variability in characteristics depending on the cultivation region and specific biotype, such as Grosso or Piccolo.
