Verdejo is an ancient variety grown in Spain since the 11th century. Genetically, it originated from a natural cross of the Savagnin and Castellana blanca varieties. The vine has vigorous growth and high vitality; plants can be long-lived, reaching ages of up to 80–100 years.

Morphologically, the variety is characterized by medium or small bunches and medium-sized, round, yellow-green berries that become translucent at full maturity. The leaves are medium-sized, predominantly five-lobed. The variety prefers clay and clay-chalk soils and shows moderate drought tolerance.

Wines produced from this grape possess balanced acidity and freshness. Their aroma often includes herbaceous and nutty notes, specifically fennel, while the aftertaste is characterized by a slight bitterness. The variety is well adapted to a climate with hot summers and cold nights.
