Hop Ripeness Groups

Humulus lupulus L.

Classification of hop varieties based on the length of the growing season from the beginning of regrowth to the achievement of technical ripeness by the cones, used for planning the harvest campaign.

Hops are divided into early, mid-early, and mid-season varieties. The main criterion is the length of the growing season, which for European varieties ranges from 110 to 130 days. Varieties within the same group may differ in development speed by 7–10 days depending on the year's conditions.

Technical ripeness of the cones is determined by their firmness, the acquisition of a golden-green hue, characteristic aroma, bright yellow color of the lupulin glands, and the achievement of maximum alpha-acid content. If harvesting is delayed, the cones turn brown and lose quality, acquiring off-odors.

The choice of ripeness group allows for adapting the crop to the climatic features of the region, avoiding harvest interference from early autumn frosts. Furthermore, the differentiation of varieties by maturity dates is necessary for balancing the load on harvesting equipment and ensuring efficient organization of operations.
