The brewing quality of hops is determined by the biochemical composition of lupulin in female inflorescences, specifically the content of alpha-acids, beta-acids, and essential oils.

Hop quality is based on the quantitative ratio of three groups of compounds. Alpha-acids, including humulone and cohumulone, are the primary indicators of bitterness and form iso-alpha-acids during wort boiling. Beta-acids, represented by lupulone and its derivatives, make a supplementary contribution to bitterness and antiseptic properties. Essential oils define the aromatic profile, including citrus, fruity, or spicy notes, and are characterized by high volatility.
Agronomic evaluation includes visual inspection of cone integrity and elasticity, assessment of lupulin content, and the purity of the raw material from foreign matter. The standard moisture content is up to 13%. Varietal classification divides hops into fine varieties, valued for their aroma, and bittering varieties with high alpha-acid content for imparting intense bitterness.
Unlike cereal crops, the brewing quality of hops is critically dependent on post-harvest processing and storage conditions, as the oxidation of aromatic oils leads to a rapid loss of properties. In addition to genetics, the microclimate and terroir of the growing site exert a significant influence on the biochemical composition.
