Malting quality of rye is determined not by breeding varieties, but by grain purity indicators, enzymatic activity, and physicochemical properties that influence the mashing and wort filtration processes.

For rye, there is no concept of a "malting variety" in the classical sense as there is for barley. Due to the absence of floral husks, the grain absorbs moisture faster and requires specific malting regimes. The most important quality parameters for processing are the falling number, germination energy, and strict phytosanitary control aimed at excluding ergot contamination of the grain.

The technological value of rye is limited by high levels of beta-glucans and proteins, which increase mash viscosity and complicate wort filtration. Agronomic requirements for the crop are shifted toward ensuring a stable biochemical composition, which is necessary for the formation of the characteristic flavor profile, beer body, and foam stability when rye is used as a specialty ingredient.
