The cold tolerance of leeks is determined by the ability of actively growing plants to withstand sub-zero temperatures without death or loss of market quality, which allows for flexibility in harvest timing and overwintering practices.

The ability of leeks to withstand temperature drops depends on the cultivar group. Mid-season cultivars maintain their quality during short-term frosts down to –5...–7°C, whereas late-maturing cultivars are capable of withstanding temperature drops down to –15°C in the absence of snow cover.
The trait of cold tolerance determines the choice of cultivation technology: cultivars with low resistance require harvesting before the soil freezes, while highly resistant late-maturing cultivars can remain in the ground until spring if covering materials or snow are used. Despite the resistance of mature plants, the crop is sensitive to cold during the initial stages of development in the 1–3 leaf phase.
