The suitability of sour cherry for processing is determined by the type of fruit detachment from the pedicel, flesh firmness, and size-mass characteristics. Cultivars with 'dry' detachment, where the skin remains intact, are most valuable for mechanical harvesting and industrial use, as this prevents juice leakage and spoilage of the raw material.
Biochemical criteria include the balance of sugars and organic acids, as well as the content of soluble solids. When evaluating suitability for freezing, the key parameters are the water-holding capacity during thawing and the preservation of organoleptic characteristics, such as color, taste, aroma, and fruit consistency.
