The presence of the stone is a key factor determining the shelf life of cherries in the freezer. Pitted fruits retain their quality for up to two years, whereas cherries with stones should be consumed within 10–12 months to avoid the release of harmful substances, such as hydrocyanic acid.
Due to high juiciness and a tendency to lose shape if the skin is damaged, cherries require a delicate approach during freezing. To prevent excessive juice leakage and clumping, flash freezing, the application of a sugar coating or freezing in syrup, as well as mandatory pre-drying of the fruit surface, are effective.
