Marrowfat varieties containing higher sugar and lower starch content are preferred for freezing, as they ensure a tender consistency of the product. The suitability of a variety for processing is also determined by its genetic ability to retain pigment during thermal processing and the stability of biochemical indicators under various growing conditions.
